Crickets protein production procedures are well known and a variety of protein extraction and separation techniques are used in food production. These separation techniques are widely applied in cricket protein flour production. Complementary research is needed to improve the extraction techniques in order to increase production, quality, and to become environmentally friendly by adopting a 100% green process.
